Hand reared birds
Day old chicks, ducklings, goslings & turkey poults are brooded
under heat lamps until they are old enough to explore the outside
world. S&J’s birds are kept in small batches ensuring
that all the birds venture outside. The mobile arks are rotated
around the farm to prevent any build up of disease & to rest
the pasture.
The organic birds are fed a mixed ration of grain & protein
that meets the Soil Association standards for organic poultry. They
eat grass too, as they roam over the pasture. It is the grass that
gives S&J’s birds the subtle golden colour that gives
them the name “Golden Welsh”. Ducks have access to water
and none of our birds are debeaked or wing clipped.

How are they different?
Economies of scale & increasing domination
of the food market by large multiples have intensified chicken production.
Even free range systems house thousands of birds in any one shed.
The chickens cannot set up a hierarchy, so few venture outside.
Light levels are low to encourage docility & their feet are
pale – almost translucent.
Our birds are active & feel the sun
& rain on their backs
Making a living off 20 acres isn’t easy, but we believe that
there is still a place for small family farms where extra time &
trouble can be taken so that animals are nurtured, not just farmed.

We want to create a farm where the land can maintain
its fertility whilst producing exceptionally good food without the
use of unnecessary synthetic chemicals.
S&J care passionately about the welfare of
their stock & the vital importance of the quality & integrity
of food.
It seems only right to continue this care right through the cycle.
So the birds are killed & dressed on the farm, in our Soil
Association registered abbatoir. This ensures the highest standards
of welfare & eliminates stress from traveling.
Delivering the poultry
The poultry is sold from the farm gate,
through
Farmers’ Markets and mail order.
Delivery is by our own LPG gas powered vehicles or courier.

The Farm
Chickens
Our chicken has a flavour you won’t find in your average supermarket.
We are always looking out for breeds that work well within the organic
production system, have outstanding flavour and provide the confirmation
our customers want.
Our chickens weigh between 1.8 & 2.8kgs. They are plucked and
dressed on the farm and can be jointed or filleted as you wish.
Fresh chicken is available weekly throughout the year.
Aylesbury ducks
This is the classic table duck reared organically. It gives
you a fabulous flavour derived from birds that feel the sun &
rain on their backs. All our ducks are dry plucked, & hand finished.
The ducks range from 2-4kgs.
Generally a small duck (2-3kg) will feed 3 to 4 people; a larger
duck (3-4kg) will feed 4-6 people depending on appetitie. We have
plenty of large ducks for Christmas and would be happy to advise
on your requirements. Duck should be available most of the year.
Muscovy ducks
The Muscovy (also known as Barbary) duck developed in South
America originally. All other domesticated ducks are related to
the wild mallard, but not the Muscovy. It also tastes nothing like
duck! The best way to describe it is: a very dark meat with the
texture of poultry but the flavour almost of beef! Sounds bizarre
I know. The texture is melt in the mouth.
When estimating how much you need to feed people - the Muscovy is
leaner than an Aylesbury & the meat is denser, so it will go
further.
Geese
Geese are only available for Christmas. But what magnificent
geese they are! They will range from 3-5kg and make a fabulous alternative
to turkey for Christmas lunch. As with the ducks, the geese are
dry plucked, and hand finished by us.
Potatoes roasted in goose fat are something else. You can roast
the goose on a rack above a roasting pan in order to save the fat
for the spuds. If you make small slits in the skin of the goose
using the point of a sharp knife, the fat will drain into the pan
below. As with the ducks, the geese are dry plucked, and hand finished
by us.
Bronze Turkeys
Eating an organic turkey is a quite different experience
from your average turkey dinner. We rear bronze turkeys from a day
old. They have a magnificent view over the undulating hills that
surround us.
Our turkeys are all dry plucked and hand finished here on the farm.
Guinea Fowl
Should be available Summer 2004.
